Fish Taco Recipe
Here's fast nutritious meal everyone loves! Fish Tacos only take about 20 minutes to make and for zesty southwestern taste, top it off with tangy mango salsa. You can purchase store bought mango salsa or make your own for fresh salsa tastes. Baked Fish Tacos only has 435 Cal., and 25 gram total fat. GREAT for your health!
Serving for Four
1 pound cod or orange roughy (fresh unfrozen for better taste)
2 tablespoons melted butter (or margarine)
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
3 tablespoons mayonnaise or salad dressing
1 teaspoon lime juice
1 ½ cups shredded cabbage + carrot
8 corn taco shells or flour tortilla (warm them up according to package directions)
Mango Salsa - 2 cups
Add following in medium bowl and mix together:
1 ½ cups chopped, peeled mangoes
1 medium red sweet pepper chopped
¼ cup thinly sliced green onions
1 jalapêno chile pepper finely chopped
1 tablespoon olive oil
½ teaspoon finely shredded lime peel
1 tablespoon lime juice
1 table spoon vinegar
¼ teaspoon salt
¼ teaspoon black pepper
1. Rinse fishes and pat dry with paper towel. Cut fish into ¾ inch slices crosswise. Place fish on greased shallow baking pan. Combine butter, cumin, and garlic powder and brush over fish. Bake in a 450˚ oven for 4 to 6 minutes (or until fish flakes with a fork)
2. In a medium bowl, mix mayonnaise and lime juice and add shredded cabbage. Place in taco shell then add fish slices. Top with mango salsa.
For beer batter fried fish tacos, in a large bowl combine 1 cup (all-purpose) flour, 2 tablesppons cornstarch, 1 teaspoon baking powder, and ½ teaspoon salt. Blend 1 egg and 1 cup beer and pour into mixed flour bowl. Heat oil in deep fryer to 375 degree. Dusts fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden browns. Take it out of deep fryer onto paper towel. (You can also lightly fry tortillas; not too crisp.) Place fried fish on a corn tortilla, and top off with shredded cabbage, with white fish sauce or mango salsa.

Ok I have heard of fish tacoes but never seen one. My gf in California LOVES them... Will have to send her here so she can learn how to mkae them at home lol..
